Patriotic Fruit Pizza

Hi all! Happy Independence Day! For this festive Fourth of July, I whipped up an easy people pleaser, fruit pizza! My aunt used to make this specifically for this holiday when she would come down and visit from Washington. Unfortunately she won’t be here this year, so I took it upon myself to recreate this fun and festive dessert.

I decided to stay within the red, white, and blue theme, but of course any fruit works. Follow your chosen recipe and it will be simple as pie..;)

My May Faves ’14

Hello! ..I know, it’s been awhile. >.< School and work have been a little extra hectic for me this past month so I apologize for being beyond absent. This semester has been a tough one, but finals are next week and then onto SUMMER! (jumping for joy) Although I’ve been away from kiki cuisine during the month of May (sorry blog), I tried some new beauty products and goodies that I’ve been totally obsessed with and want to share!  

May Faves '14 | kikicusine.com Ok this first one isn’t just a May fave…it’s an all year favorite because peonies are my all time favorite flower! Since it’s the beginning of peony season, I thought it was appropriate to add these to this month’s favorites list. I love their wispy elegance, class and array of colors! My mom sent me this pin recently, and oh my, they are all so beautiful and I can’t wait to add them to my Trader Joe’s cart every time I’m at the market. I have some currently in my room and they are so beautifully sweet and potent, I really can’t get enough. 

May Faves '14 | kikicusine.com This greek yogurt is my new favorite! I’ve tried different greek yogurts in the past, but I’ve been loving this one. Sometimes when yogurts, sweet treats and other foods are labeled with the flavor vanilla bean, the true bean isn’t listed, or seen, as an ingredient at all and vanilla extracts replace it. I love how you can actually see the vanilla bean particles in this yogurt! It adds just the right amount of sweetness, making this one of my favorite on-the-go breakfasts and snacks this month. – I actually had this yogurt with blueberries as I was driving to work yesterday morning and it was simple, but delicious! 

May Faves '14 | kikicusine.com I guess I’m really into vanilla this month! 0.0 No joke though, this body wash by method smells just like pure vanilla extract! I swear I feel like a warm vanilla cookie after I use this. Not only am I in love with the scent, but also the packaging!! These dainty pastels are to die for. Good job method! This soap isn’t like the usual consistency of other body washes, instead of a thick gel, it’s runnier which makes it a little more difficult to control..I mean it’s not a big deal, but when I first used this I totally didn’t expect it to pour out as fast as it did, so it went everywhere and I accidentally wasted product. =\ So basically if you want to smell like a warm vanilla cookie, you should definitely give this a try and overlook the texture! I love it so much I bought the hand soap in the same scent with the same great packaging! (;

May Faves '14 | kikicusine.com I’ve been really curious about the yes wipes for awhile now since they’re so popular. I decided to give them a try this month and ended up really liking these guys a lot! I found them really handy while I was traveling because I couldn’t take my 5.5 fl oz Neutrogena makeup remover on the plane. They do a really good job of removing my face makeup and eyeliner. For some reason, I find satisfaction when I see my face makeup on the wipes..does anyone else feel the same? I usually think, one, wow my makeup lasted all day, and two, yes please clean and get this stuff off my face. Unfortunately, the only negative is that it’s not strong enough to get my mascara off..I usually don’t wear it much anyways, but if I do these wipes aren’t enough to completely remove it later. Only bummer, but they are a great easy makeup removal that makes you feel relaxed while also leaving your skin feeling hydrated. *Also I tear these wipes in half because I feel like using a whole sheet is somewhat wasteful and unnecessary for my face.

May Faves '14 | kikicusine.com If you’re into makeup then you’ve probably heard a little something about this BB cream that benefit released in late February. Now I’m not one to wear foundation at all, but sometimes I like to wear BB cream here and there. I was using a Korean one, but it was a shade too light and wasn’t doing anything amazing for my skin. I was on the search for a good BB cream for awhile because again, I’m not into foundation at all, it just feels heavy oily and bleh to me. To be honest, I am very blessed that my mom tossed down her beautiful skin genes to me because I have never had acne, just usually a blemish here and there, and for the most part I don’t have a problem my natural facial skin and nothing has been wrong with it. BUT sometimes ya girl just wants a little brighter/smoother/put together looking skin, and when I heard that benefit was releasing a BB cream, I was beyond excited and knew I had to try it out. I’ve been trying this product out since March..and ya I know it’s been a couple months, but I really only wanted to share it if I actually really liked it, and I do! The big easy is awesome because it has SPF 35, a natural finish, and its super light on the face. I don’t apply this everyday, but when I do, I really love the way it evens out my complexion and makes my face feel a little more put together. Thanks benefit! 

May Faves '14 | kikicusine.com Lastly is my ultimate favorite treat this month, and I think it will continue to be favorite through summer and forever! If you follow me on my Instagram (@_kikicuisine), then you already know I’ve been currently loving the raspberry rose sorbet by Carmela Ice Cream. Oh emm gee. Seriously I have died and gone to heaven because there is nothing more refreshing and so unexpectedly perfect for my pallet. I’ve never been one for florally enhanced desserts, ice creams, etc., but for some reason I cannot get enough of this sorbet. It’s my new guilty pleasure. For this sorbet specifically, Carmela uses organic rose water and raspberries, but all their ice creams are made with organic dairy and farmers market produce so I mean it’s basically healthy ..right? :P I really have to enjoy the time this flavor is here because since they do use farmers market produce, their flavors are seasonal, and my new fave is a summer special. If you’re in the LA or Pasadena area I highly recommend trying this sorbet, it’s a life changer.

Then & Now, My Prom & His

Hi there! Today I am posting for the memory bank. #FlashbackFriday! 

Looking at these two photos side by side, I cannot believe a whole year separates them! It seems like just yesterday I was in high school excitedly getting all my prom details in order: finding a long dress, picking my hairstyle, ordering a corsage, oh and asking my boyfriend to be my date. (;

Last weekend it was my little brother’s turn to get ready for the big “night to remember”..and technically he isn’t so little anymore. I still remember how I used to think he’d stay wittle (little) forever, and never become a teenager or surpass my height..welp he has nailed both. Even though there’s a part of me that misses the two stubborn kids we used to be, I am forever grateful that we get to grow up together and become stronger friends day by day. There aren’t enough words to describe how incredibly proud I am of the person he’s maturing into, and I cannot wait to see where the next few years take him. Though for now, I will continue enjoying his bright smile and sarcastic jokes.

Chocolate Avocado Pudding

Hello hello! Happy Indulgent Friday my friends!

Now hold on, don’t judge that chocolate avocado pudding too fast. I discovered this recipe while watching Ingrid Nilsen’s  (@missglamorazzi) easy and healthy spring recipes YT video, and at first I was thinking the same thing you probably are, unsure and hesitant towards the sound of that combination. After seeing all the other ingredients on the list, I was more than intrigued to give this a try! 

My favorite part about this recipe is the all-natural, healthy ingredients that make up this decadent dessert. I tweaked the ingredients just a tad, and to my surprise the avocado flavor was scarce! This pudding is super rich so if you’re a hardcore dark chocolate lover then this is your kind of recipe! I only could have small bites of this because after too many my mouth was like, alright too rich, too rich! I suggest adding some fruit, like strawberries, or a dollop of whipped cream to make it sweeter.

Ingredients
  1. 2 ripe avocados
  2. ⅓ cup cocoa powder
  3. ⅓ cup organic agave syrup
  4. 3 tbsp coconut oil
  5. 1 tsp vanilla extract
  6. ½ tsp chia seeds
  7. Fresh strawberries - optional
Instructions
  1. Using a blender or food processor, add all the ingredients together then blend!
  2. Let the mixture set in fridge for 30 minutes.
  3. Add fresh fruit and enjoy!
Notes
  1. I used agave, but organic honey can be substituted.
  2. Originally I started blending my ingredients in a blender, but it wasn't strong enough (poor thing) so I had to pull out the food processor.

How Carrots Killed My Vibe

This week I got screwed over by carrot cake. Ya I know, “uh what..?”

It all started with an idea for an Easter inspired Indulgent Friday post; carrots & Easter, a perfect stereotypical combination. I’d bake adorable carrot cupcakes, frost them with a to-die-for cream cheese frosting, and top them all off with mini fondant carrots. I didn’t think I’d have a whole lot of trouble, just lots of fun. I specifically chose my grandma’s carrot cake recipe because I thought I would be able to recreate it no problem, but something went wrong. The recipe was for a cake, but I mean cake, cupcake, it’s all the same recipe excluding the temperature and baking time right? I am not a professional pastry chef so I can only back that up with my past baking experiences. 

Anyways, I opened the oven to check up on my cupcakes, and after a little peek I was shocked. I kid you not, my jaw dropped with utter confusion. The cupcakes were HUGE, expanding like crazy, and not rising from top to bottom, but spilling over the sides and into each other. Obviously my leveling agents were off, but how? :( I had so much confidence in my grandmother’s recipe I didn’t think once to second guess it. 

Doesn’t it suck when you work so hard on something and it blows up (literally) in your face. I know it happens to all of us and we’re only human, but seriously what the heck. -.-” Even though carrots aren’t my favorite veggie at the moment, I’ll get over this midweek baking crisis and continue moving forward with fun new projects. I won’t let these carrots kill my vibe – even though they definitely did Tuesday night – just like you shouldn’t let small obstacles in life kill yours. Advice I’ve heard before, but hey a reminder doesn’t hurt.

My March Faves ’14

Hello hello! ^.^ I haven’t done a favorites post since December so it’s about time I share all the new products I’ve been loving! ♥

IMG_9647 This is the first time I’ve purchased anything from Lush and I’ve been really enjoying these products!! I love how all of their products, minus the ones with SPF, aren’t tested on animals and are made from all natural ingredients. The first one is a fresh face mask made called Catastrophe Cosmetic made from real blueberries! My face literally glows after applying this mask and has never felt so soft! After my whole family saw the positive effects from the mask, everyone wanted a try, and not to my surprise they all loved it too! (: The only minor downside to the fresh face masks are that they expire quickly so be sure to use them all up before then, but hey it’s all fresh ingredients so it’s worth it.

The second product is a toner spray called Eau Roma Water, and I always spray this directly on my face right after I wash, exfoliate, or use a face mask. This toner has rose and lavender extracts to relieve dry skin and it always does a great job to refresh my face. Although it’s the most moisturizing out of all the toner products, I still follow up with my usual face lotion. 

Lastly from Lush I tried an exfoliating cleanser called Let the Good Times Roll. This has become my new nightly face wash and I love how it not only clears grime and makeup, but you can actually feel it working with your skin because of the exfoliants, a corn meal & popcorn duo! PS. It smells like warm cookies and it’s amazing

Kiki's march faves Fourth on my favorites list is the “simply almonds, cashews & chocolate trek mix” from  Trader Joe’s. Usually in most trail mixes there are some sort of dried fruit and to be honest, I’m not a fan..so this simple mix is perfect for me! I’ve been taking this as my school snack lately and it’s so filling and satisfying, perfect for a small bite in between classes or my long “trek” home. (; 

Kiki's march faves 5. Another yummy thing from TJ’s that I’ve been really interested in this past month is the cinnamon sugar grinder! I’ve had my eye on this one for a really long time, but never actually bought it. At the beginning of the month my mom went on one of her weekly Trader Joe’s runs, asked me if I wanted anything in particular, and usually always I say nothing, but the last time she went I remembered this fun grinder! I don’t really know why I wanted it, but I like it! It gives the perfect additional sweetness to my morning toast or yogurt.

 6. Moving onto makeup, I have been obsessed with my NARS radiant creamy concealer! If I was stranded on an island and only allowed one type of makeup, it would be concealer hands down. I have a bad case of dark circles and even with lots and lots of sleep they don’t seem to go away…but as long as I can conceal them I don’t really care. I’ve heard a lot of great reviews for this concealer, and I’m now one of them! I don’t have anything to complain about, my nars concealer works wonders for me, it usually always stays on throughout the day and it blends pretty perfectly into my skin. My old everyday concealer was by Clinque and one day I decided to go back and give it some love again, but it was nowhere near as good as my nars one. Seeing the strong difference between the two was just affirmation that the nars one is officially my all time fave. 

Kiki's March faves 7. (emoticon with heart eyes) I love this lip balm! It smells so good, it keeps my lips really moisturized, and c’mon it’s Christian Dior. I heard about this product through some of my fave beauty gurus, and they all shared positive comments so I decided to give it a try. This one is a bit pricey, but if your lips tend to dry out a lot like mine, then I think this lip balm is a really good investment. …My lips probably dry out because I don’t drink enough water (need to start staying more hydrated)…=|..but thankfully Dior comes to my rescue! 

Kiki's March faves Lastly on my faves list is this honeysuckle candle from bath & body works! All of a sudden I’ve started a candle obsession! :o I love to burn them before I go to sleep or while I’m studying and this one smells beyond amazing. At first I just thought is was purely honeysuckle, but no, it’s paired with only my favorite flowers in the whole entire world. Not only until last week did I read the actual description and it reads, “the scent of early spring contained in a bouquet of sweet honeysuckle and pink peony with a touch of creamy vanilla.” Um, YUM! How did I not pick up the other scents?? This candle completely relaxes me and I’m going to be sad when it’s all burned up. 

That concludes my all my favorites for the month of March! I hope this was helpful and interesting, and I can’t wait to see what becomes a part of my favorites collection in the next couple months! (:

Picnic Perfect

When the sun is shining without a cloud in the sky, and the temperature is somewhere around 73° (F) with the slightest wind (sounds absolutely perfect right?), this is the SoCal weather I know and love. Lately I’ve been craving an opportunity to sit outside, not be chilly..(because I get cold SO quickly), and simply enjoy the nature my suburb has to offer. Last Friday I finally got to do that! One of my favorite, favorite things to do is to enjoy the fresh air and sunshine by laying out a mat, grabbing/making some delicious food, and enjoying it all with my best friend. It’s so relaxing, and this may sound corny, but it really does make my heart happy because I get to spend QT (quality time) with my man and feed our bellies together. I am so thankful for picnics.

Max and I went a little overkill with food this time, our stomachs were bigger than our brains that day. :P It’s the result of waking up around 10:45am and not having breakfast okay, whoops! We stopped at Porta Via and just kept ordering more and more food, everything was screaming at us! It also doesn’t help when I can honestly eat any Italian sandwich at any time of the day, definitely one of my favorites.

Max’s spring break came to an end today so I’m a sad guy here. BUT we got some excellent news tonight! We will most definitely be in the same state next fall!! :D I’m beyond excited for Max! And obviously us as well because this is the first time in our relationship where we won’t actually be a ways away anymore! Two. I repeat almost two years this guy and I have been together long distance, which if you’re curious, we’re in separate states, about 860 miles away from each other. I wouldn’t change any of it because it has only made us grow and become 10x stronger together, but it will be nice to be within driving distance from one another. Just wanted to share all of this as a personal note – and even on a sad farewell day, we found out tonight that it will be our last and we will finally overcome this milestone together!

My 2014 Spring Must-Haves!

Although LA has been warm for awhile, I’m still very excited that spring has officially sprung! With the recent change of seasons I wanted to share my must-haves for this spring! (:

Kiki's spring must haves!

 1. First up on my list, homemade organic ice cream from a local ice creamery called Carmela. If I were to order a single, this is exactly how I’d do it! Single scoop + waffle cup cone = no drip, no mess, and all the satisfaction of a ice cream cone in a cup! 

2. Simple versatile graphic tee by on of my favorite fashion bloggers Sincerely Jules! Do you love her blog too?!

3. Correct me if I’m wrong, but didn’t Tory Burch just recently launch some new distinctive lipstick shades?..I thought I saw her post on Instagram..well anyways, I’ve been dying to try some! Just from the picture and description, I’m already loving this shade! (Pretty Baby)

4. I bought this nail polish last month and I’m LOVING it!! It’s currently on my toes ^.^ 

5. Can’t go wrong with Toms! I’m in need for a new pair, maybe I’ll rock this light yellow for spring? Yay or nay? 0.0 

6. So. I’ve had my eye on this small light pink Kate Spade bag for a.while. now! :o ..and I want it.

7. I’m a total shorts girl, I’d choose them over a skirt anyy day. This one from J.Crew has the perfect print and colors for spring!

8. I’m obsessed with dainty gold jewelry, the more the merrier! Both the mini hex & traid ring are by BaubleBar!

9. See? Here I go again :p Small gold initial pendant & gold bar necklace, again by BB. 

10. With this warm weather the perfect refreshment is so necessary! I really want to try to make this peach lemonade, thanks LC for the inspiration!

Pheww, can I say I’m happy it’s Friday?! I haven’t had such a busy week in a long time, and my busyness isn’t even over yet. 0.0..What did I do? Well for starters, I began a new job this week! I’ve been in between jobs since January and while I’m very excited to be working again, the only thing that’s difficult so far is getting back into the groove of having a full schedule again. A completely normal feeling, right?This week’s agenda was Monday – work, Tuesday – school, Wednesday – work, Thursday – school, Friday – off (thank god), and Saturday and Sunday (still to come) – work and work…>.<”” I’m very thankful I am able to work and go to school, I’m just working on adjusting to it all.

My schoolwork hasn’t been too difficult, but I drive all the way to Santa Monica which kills my sanity and gas tank. – Those who commute will understand how I feel! :\ – BUT, when I have such a busy schedule I appreciate days off so much more and I’m glad I can relax and re-energize today. I constantly remind myself it’ll be all worth it, it’ll all be worth it in the end. 

As for my blog, yes this week was a little rocky for me, like jumping into a ice cold pool, but I’m just going to keep focusing on what I need to do, and if that means posting a little less recipes, that’s what I’m going to do. I’m 99.75% (lol at my estimated percentage) confident that I’ll blog something at least once a week, but since I’m a busy bee again I don’t want to pinky promise two.

This morning I went into Old Town Pasadena and tried to sell some of my clothes at Crossroads Trading because I’ve had a pile of ‘clothes to get rid of’ growing for months now. After parting ways with my old clothes, I just window shopped and had a mini indulgent treat at Pinkberry with my parents! (:

Mochi Cake

Hello, happy Indulgent Friday! Today I’m sharing one of my mom’s favorite desserts, a fluffy and chewy mochi cake! Instead of normal all-purpose flour, mochi cake is made with sweet rice flour which gives it a gummy texture instead of a traditional spongy cake one. After cut into small cubes and dressed up a bit, mochi cake is perfect for serving as tiny tea cakes for a tea party or brunch. The sweetness, texture, and perfectly crisp edges make this cake truly unique, and the only way to understand what I’m talking about is to try it out for yourself. This dessert only calls for a handful of ingredients and is fairly simple so don’t be intimidated by the ‘mochi’ name!

Ingredients
  1. 1½ cups Mochiko, sweet rice flour
  2. 1¼ cups sugar
  3. 1 teaspoon of baking powder
  4. ⅛ teaspoon salt (or a medium sized pinch)
  5. 1 can of unsweetened coconut milk (14 oz)
  6. 2 large eggs
  7. ¼ stick unsalted butter, melted & cooled
  8. ½ teaspoon vanilla extract
For topping (optional)
  1. Condensed milk
  2. Strawberries
  3. Toasted coconut
Instructions
  1. Preheat oven to 350ºF
  2. In a large bowl, whisk dry ingredients together.
  3. In a separate large bowl, whisk together wet ingredients until just combined.
  4. Slowly whisk the wet mixture into the dry ingredients, and mix until the texture is smooth and all the ingredients are fully incorporated.
  5. Grease an 8x8 baking dish, then pour batter and bake for 45 minutes. *Use a toothpick/skewer to see if the cake is completely done by poking the center and if it comes out clean it's done!
  6. Let it cool for about an hour before cutting.
  7. For an optional topping, I like to spread a little condensed milk over the top, then sprinkle with toasted coconut (heat a pan & carefully toast sweetened coconut shreds), and top it all off with some finely cut strawberries.
Notes
  1. Mochiko flour can be found at any local Asian food market.
  2. I like to leave the cake in for an extra 3-4 minutes after its done so the edges can be extra crisp.
